This was my first experiment with a gluten free recipe, so bear with me.
I looked at the recipe I had and then went totally off course so let me try to see what I came up with here:
2 cups whole almonds dashed to smaller pieces in food processor
1 cup shredded coconut
1 tbs cocoa powder
small handful chocolate chips (I used milk chocolate but dark would be better)
Egg whites (about 1/3 cup all together)
I also had some almond meal so I threw in a little bit in hopes of sticking all of this together.
It wouldn't form into cookies so i made it into a giant bar and popped it in the oven until toasty tasty. Probably about 20 min at 350, the husband liked them, and I didn't feel too guilty eating them.
Weird looking but tasty....I won't call it a win....but a tie.
